Taco Bell released its new Baja Blast Pie in January 2025, and as a fan of trying new fast-food items, I had to check it out. The pie is supposed to take the famous Baja Blast soda flavor and turn it into a dessert. It definitely looks interesting, the outside crust is golden brown, and when you bite into it, the inside is a bright teal color that immediately reminds you of the drink.
The second thing I noticed was the texture. The filling is really sticky—so sticky that it sticks to your teeth and the crust in a way that makes it a little hard to enjoy. The texture doesn’t soften as you eat it either. Each bite feels heavier and more noticeable.
The flavor is exactly like Baja Blast, but that might be the problem. The soda is already pretty sweet, and in pie form, there’s nothing to balance it out. Without the coldness or fizz of the drink, the sweetness just keeps building with every bite. It’s not horrible, and I did enjoy the first taste, but after a few bites it almost became too much. It’s the kind of dessert that’s fun for one bite, but most people probably won’t want to finish the whole thing.
I’ll give Taco Bell credit for trying something totally different. It’s bold, creative, and definitely something that will get people curious. Some hardcore Baja Blast fans might love it, but for me, it ended up feeling more like something you try once just to see what it’s like, not something you’d go back for.
Overall, the Baja Blast Pie is a fun idea but too sticky and sweet to recommend. I would not try it again or tell anyone else to get it.
